Allspice Macaroons

Allspice Macaroons

Place the meat of 3-4 mature coconuts, 1/2 of a ripe ulu (aka breadfruit) cored and skinned (tender to touch), 1 teaspoon allspice powder, 1 teaspoon Ceylon cinnamon, two pinches Hawaiian Alae sea salt and a 1/2 teaspoon macadamia nut oil into a Cuisinart. Blend until mixture is combined thoroughly with a coarse texture. Coat baking pan lightly with coconut oil. Preheat oven 330 degrees. Form medium size mounds (1-2 inch rounds) onto pan about 1/2” apart. Drizzle Allspice honey on each mound and dust with cinnamon. Bake until golden brown. Drizzle Allspice honey on mounds once more, plate and serve with your favorite Kauai Farmacy tea!

Genna’s Ulu bagels with macnut scallion cream cheese


Recipe:


Skin and core ulus.
Chop and put into vitamix. Add sage, rosemary, tablespoon-ish of coconut oil and hawaiian alae sea salt. Blend together (starting on low setting and dialing up as you go). Coat baking trays with coconut oil. Spoon and shape batter on trays into bagel shapes and spread evenly into a thin "flatbread" thickness. Oven bake at 320 degrees until firm to touch. Flip ulu bagels and replace in oven to firm other side.

Separately, put 1 1/2 cups of macadamia nuts into vitamix; add 3/4 fl oz spring water, add any small pepper (not spicy and without seeds), 3-ish pinches of Hawaiian alae sea salt and the juice of half a lime. Blend together until creamy. Fine chop a tablespoon or more of green onion (chives or scallions) and mix this into the creamy mixture by hand with a spoon.

Ulu bagels 🥯 are ready when golden brown and are best served fresh out of the oven. Spread macnut scallion cream cheese on ulu bagels and enjoy!

  • Slice avocado in half (long-ways), remove seed.
  • Dice tomato and green onion
  • Chop fresh cilantro
  • Combine together in a separate bowl.
  • Squeeze in lime juice
  • Add Hawai'ian sea salt, 1 pinch Kauai Farmacy Curry powder (or more for additional heat), and optional 1 pinch Kauai Farmacy Savory blend.
  • Optional: Add minced jalapeño for desired heat.
  • Scoop salsa mixture over avocado halves.
  • Garnish with lime wheels
  • Enjoy!

Cardamom Coconut Pudding

Cardamom Coconut Pudding

INGREDIENTS: Coconut Meat, Coconut Water, Pineapple Sage blossoms, Mint, Kauai Farmacy Cardamom Honey (all organic).

SERVINGS: One

KITCHEN TOOLS: High speed blender

 RECIPE:

  1. Blend 2:1 parts coconut meat to Coconut water until thick and creamy
  2. Pour into bowl or teacup, generously drizzle Cardamom Honey in a swirl-like motion
  3. Garnish with pineapple sage blossoms or choice of edible flowers and mint
  4. Enjoy!

Breakfast Cereal Papaya Allspice Honey

Allspice Honey Banana Nut Cereal

INGREDIENTS: Apple-bananas (not apples – these are the sweet small tropical bananas that are called apple bananas, but regular bananas will do just fine), cashews, macadamia nuts, pecans, coconut milk, papaya, mint, pineapple sage blossoms and Kauai Farmacy Allspice Honey (all organic).

SERVINGS: One

KITCHEN TOOLS: Sharp knife, food processor, high speed blender, cutting board.

RECIPE:

  1. Add 1 cup total of mixed, unsalted, nuts, one pinch of Kauai Farmacy Endurance Powder and one tablespoon of Allspice Honey to food processor
  2. Run food processor until the consistency resembles wet sand
  3. Dice bananas
  4. Combine all ingredients into bowl or cup
  5. Separately, blend coconut meat and coconut water together in high-speed blender to make coconut milk
  6. Pour coconut milk over banana-nut-cereal and mix together
  7. Place bowl on larger plate; remove seeds and skin from papaya
  8. slice and plate papaya
  9. Lightly drizzle Allspice Honey on top of cereal and fresh papaya
  10. Garnish with sliced banana and mint
  11. Enjoy!

Turmeric Hopney Veg Stirfry

Turmeric Honey Sauteed Vegetables

INGREDIENTS: Bele Spinach, Carrots, Cabbage, Onion, Broccoli, String Beans, Garlic, Coarse red Hawaiian Sea Salt, Olive oil, Lime juice and Kauai Farmacy Turmeric Honey and Curry Spice Blend. Side: Sprouted Clover (all organic).

SERVINGS: one

KITCHEN TOOLS: Sharp knife, garlic press, Sauté pan, and cutting board.

RECIPE:

  1. Chop/slice all veggies into bite size pieces
  2. Heat oil in the pan
  3. Crush 3 cloves of garlic through the garlic press and add to the pan wait until garlic is nice and hot, then add small amount of water and stir garlic and water together
  4. Clean spinach thoroughly, remove stems and large leaf veins and add to pan to steam when Bele spinach has reduced to half its size, remove from pan in a holding bowl
  5. Add onions to sauté for a couple of minutes, followed by remaining veggies to steam
  6. Add Bele Spinach back into the pan to combine all ingredients together
  7. Squeeze lime juice into the pan
  8. Season with a pinch of salt and a pinch of Curry
  9. Drizzle Turmeric Honey over the veggies and stir to coat evenly
  10. Plate sautéed vegetables alongside a heaping handful of sprouted clover
  11. Dress the clover with a light drizzle of Turmeric Honey
  12. Garnish with chives, parsley flowers, or edible flowers of your choosing!

Ginger Honey Glazed String Beans

INGREDIENTS: String Beans, Garlic, Macadamia nuts, Coarse red Hawai'ian Sea Salt, Olive oil, Lime juice and Kauai Farmacy Ginger Honey and Curry Spice Blend. Cream sauce: Cashews, Ginger Honey, Lime juice, Spring Water and Kauai Farmacy Savory Blend (all organic).

SERVINGS: One.

KITCHEN TOOLS: Mixing bowl, sharp knife, garlic press and cutting board.

RECIPE:

  1. Heat oil in the pan
  2. Crush 3 cloves of garlic through the garlic press and add to the pan
  3. Wait until garlic is nice and hot, then add small amount of water and stir garlic and water together
  4. Add string beans to steam; Run knife through ¼ cup of whole macadamia nuts and add to the pan
  5. Season with a pinch of salt and a pinch of Curry
  6. Squeeze the juice from half a lime
  7. Drizzle Ginger Honey over string beans; Separately, blend together, cashews, lime juice, sea salt, spring water and Kauai Farmacy Savory Blend in a high speed blender until thick and creamy
  8. Plate string beans and spoonful of creamy cashew sauce topped with a drizzle of Ginger Honey. Garnish with parsley leaf, parsley flowers, pineapple sage blossoms or edible flowers of your choosing!

Cardamom Honey Love Potion Chai Latte

  1. Brew a strong pot of Love Potion tea
  2. Spoon a teaspoon of Cardamom Honey into your cup
  3. Fill 3/4 of your cup with Love Potion

Ulu Cashew Cheese Pizza

Ulu is the Hawai'ian name for breadfruit. Ulu is a fruit that is rich in starch, like potatoes, yet sweetens in flavor when it ripens as the starches convert to natural fruit sugar. Best ripeness for this recipe is post-harvest when the cantaloupe-size fruit is tender to the touch. This pizza crust is a delicious alternative to gluten, flour recipes, and still holds its own with this Native New Yorker!

  1. Preheat oven to 325 degrees
  2. Lightly oil a baking sheet to prevent sticking with olive oil. Scoop out the inside of a ripe Ulu (Breadfruit) onto the baking sheet
  3. Sprinkle Kauai Farmacy Savory powder, a dash of Kauai Farmacy Curry Blend and Hawai'ian sea salt to season
  4. Oil palms of hands lightly with olive oil
  5. Massage all ingredients together until evenly distributed
  6. Shape into large circle, mini-circles for individual pizza pies, or large rectangle (Use a bakers spatula to spread the dough evenly, so the thickness is consistent
  7. Place in oven
  8. Check periodically—when pizza crust is firm to the touch, remove and score/slice into individual slices
  9. Continue baking until golden brown
  10. Remove from oven
  11. Add tomato sauce:
    1. Slow-cooked de-skinned heirloom tomatoes
    2. Savory blend
    3. Cuban Oregano
    4. Garlic
    5. Onion
    6. Sea salt; leaving ½” border for pizza crust
  12. Cashew Cheese:
    1. Mix Cashews
    2. Red bell pepper
    3. Lime juice
    4. Sea salt
  13. Blend in a high-speed blender, adding water to thin mixture
  14. Use spoon to apply Cashew Cheese sauce throughout the pizza pie
  15. Fine chop or julienne fresh basil leaves and sprinkle over pizza
  16. Re-slice following scores, and use a spatula to separate the pizza crust from the sheet
  17. Add Ni’oi Hawaiian Chili Pepper Flakes for added heat or eat as is
  18. Enjoy!

Raw, cheese-less, cheesy dipping sauce

2 cups raw organic cashews, 1 organic red bell pepper (no seeds),1 cup spring water, juice of one whole lime, splash of apple cider vinegar, 1/2 teaspoon of Hawaiian sea salt, 1 tablespoon raw organic honey, 1/2 teaspoon Endurance Superfood Spice.

Blend until thick and creamy (may need to add water to adjust texture). Slice veggies and dip away! Servings 4+
